I like to use wholemeal flour and sugar and, in particular for sweets, i use the flour type 2 obtained by sifting the wholemeal wheat flour.
Here is the recipe that I tried for this moist cake that I just called wholemeal cake with pears and chocolate.
Ingredients: 140 grams of flour type 2, 40 grams of wheat starch, 100 g sugar, 100 ml milk, 100 ml of marsala, 80 ml of olive oil, 50 grams of dark chocolate, 2 eggs, 1 or 2 pears (about 250 grams), 3/4 packet of yeast, a pinch of salt
Work long hours in a food processor the egg yolks with the sugar until they are a light cream
Then add the milk, the Marsala liquor and continue stirring
Also add oil, flour mixed with baking powder, a pinch of salt and finely chopped or previously grated chocolate .
Meanwhile mounted to the whites and incorporate gently to the mixture with a movement from the top downwards.
peel and cut the pears into slices about 2 centimeters thick and if the slices are too long cut a piece
Cover with parchment paper on the bottom of a cake pan and grease the edges, pour the mixture
Put the pears placing them in a radial pattern, the cake mixture will not be dense then this operation must be carried out fairly quick.
Bake at 180 degrees for about 30 min. I will in this case I left 25 min at 180 degrees and 10 minutes in the oven off and semi-open. When cooked, leave to cool and decorate with icing sugar the surface
