Looks like a star in the sky this tart with olive oil and wholemeal flour that I like so much!
Ingredients: 220 gr wholemeal flour type 2 (or wholemeal flour sifted), 80 gr of brown sugar , one whole egg and one egg, 60 grams of olive oil, grated rind from one lemon, a glass (50-60 grams) of milk, half a bag yeast, a pinch of salt, 200 gr of fruit jam.
In a food processor, mix together the ingredients: flour, oil, eggs, sugar, lemon rind, baking powder and salt. When they start to amalgamate and to form large crumbs, add flush the milk until it forms a ball. Remove the dough adding a little ‘flour, form a ball and wrap it in a towel. Let it rest at least half an hour in a cool place. Roll out the dough with a rolling pin keeping third part for the border and decorations. Cover the base of a cake tin (24 cm diameter) with the dough, add a border and fill with jam (I used in this case a plum jam with 10% of added sugar that I made last summer).
Decorate the surface with pieces of dough …..
Bake in preheated oven at 180 degrees for about 30 minutes.
