With yeast I wanted to experience the bread prepared with double rising and method which provides for the polish, which is a first very soft yeast dough that is later added a second dough to rise further ….. it is a method a bit ‘lunghini but the result is’ great because you get a really lightweight product. I prepared some small sandwiches with sunflower seeds, flax and flavored with lemon
Makes about 12 sandwiches :
for polish 60 grams of flour (I used white flour kamut ), 60 grams of yeast refreshed the day before, 80 grams of warm water .
for the dough 60 g of kamut flour , 130 grams of flour wheat semolina , 90 grams of warm water , 7 grams of salt , a teaspoon of malt (I used rice malt ) a teaspoon of oil, a tablespoon of flaxseed chopped , a tablespoon of sunflower seeds chopped , grated rind of one lemon untreated .
Pour warm water into a bowl containing the yeast dissolve and mix thoroughly (I did everything in the bowl of Kenwood , even most of the work ) . Then add the flour , stirring constantly for at least 10 minutes. I started preparing the evening and I let rise overnight at room temperature by covering the bowl with plastic wrap . The next day, prepare the dough by mixing the flour with water , malt and a teaspoon of olive oil. Add salt as the last ingredient . Combine the paste to polish and work for a long time (for at least 15 minutes) with the dough hook . Cover the ball so that it forms, still positioned nrll’impastatore , with a kitchen towel and let rise until doubled in volume (I did rise for 3 hours). At the end of the rising remove the dough from the bowl , deflate and knead on a board doing the ” folds” . Spread the dough into a rectangle that is , move the right side toward the center , the left always towards the center , rotate 90 degrees and still do the same creases forming a loaf closed book. Let rise the dough , still covered for another 2 hours . At this point form
a ball and leave in the refrigerator until ready to use (I have left it until the next day ) . Divide the dough into two parts and add one chopped sunflower seeds and other seeds of flax and chopped lemon zest .
Form small rolls and bake at 200 degrees for about 15 minutes.
