If you are vegetarian, vegan, intolerant to eggs or dairy products, if you want to eliminate fat from your diet or just want to stay in shape without giving up the pleasures of the table ….. you can try these seitan burgers ….. I’ve tasted recently and I was impressed because they are very light, nutrients and ….. very good! Needless to say, I immediately tried to prepare them, I have a little ‘re-invented the recipe ….. this is true, but in the end I was satisfied with the result, which I share with you!
Ingredients for 4 people
For the burgers: 250 gr of seitan, 100 grams of zucchini, 80 grams of red onion, 2 tablespoon of chopped parsley, 2 tablespoons of oat bran, 2 tablespoons bread crumbs, 1 tablespoon of sunflower seeds, 2 tablespoons extra virgin olive oil, salt and pepper.
For the sweet and sour vegetables: 200 grams of eggplant , 200 grams of zucchini, 20 cherry tomatoes (or “date tomatoes), 1 medium size red onion, 1 tablespoon of extra virgin olive oil, 3 tablespoons of apple cider vinegar, a pinch of salt, 1 heaping tablespoon of whole cane sugar.
To compose the burger cut into small pieces vegetables and seitan. Slowly cook the vegetables in a large pan with oil adding, if they are too dry, a little warm water. Stir and simmer vegetables for about 15 minutes. Place the cooked vegetables, the seitan and other ingredients in a blender and blend until you get a homogeneous mixture. Shape a burger with a coppapasta greased with oil and place it in a baking pan laid with parchment paper
For each burger use 2 or 3 tablespoons of seitan and vegetables mixture in order to obtain a height of about 2 cm: leveling the whole pressing lightly with a meat mallet.
Bake at 180 degrees for 15 minutes without turning: then remove the burgers from the oven , remove the pastry rings with the help of a knife and turn them with a spatula. Continue cooking for another 10 minutes. To prepare the vegetables, wash and cut them into small cubes, season the eggplant , zucchini and onions with olive oil, vinegar, sugar and salt and place in a baking dish: bake at 160 degrees for about 30 minutes turning occasionally. After about 15 minutes of cooking, add the tomatoes into small pieces and mix.
Dial the hamburger and vegetables with the help of a pastry rings
by placing the burgers over the vegetables.
