The tarts today ….. in practice they are baked pancakes, a little ‘trivial, I know, but easy, economical, versatile and fast ….. and you can also present as a single portion cakes: look at that beautiful:
Ingredients for 4 tarts: 4 eggs, 1 port, 2 medium zucchini, 1/2 mozzarella, 4 cherry tomatoes, 4 tablespoons of grated Parmesan cheese, 2 tablespoons of extra virgin olive oil, salt and pepper (optional)
Wash and cut the leek into thin rings and zucchini: cook slowly in a non-stick pan with 2 tablespoons of oil for about 10 minutes, add salt and let cool. Beat the eggs in a bowl with grated Parmesan: Add the cooked vegetables in a pan and warmed. Pour a spoonful of the mixture into 4 ramekins lined with parchment paper. Add an omelette on the surface of each tomato cut into wedges and a few cubes of mozzarella. Bake at 180 degrees for about 30 minutes.
