Ingredients (for about 5 jars of 200 gr): 2 hg of carrots, 2 hg small zucchini, 1 hg of onions, 2 hg of peppers 3 hg of cauliflower, 1 hg of celery (the weight of the vegetables refers to that of the product already cleaned and cut), 0.5 hg of green olives, 0.5 L of tomato sauce (not too thick), a coffee cup of apple cider vinegar ( plus a cup of vinegar to cook the vegetables) , a coffee cup ‘of extra virgin olive oil, a tablespoon of brown sugar, 1/2 tablespoon of coarse salt
Carefully wash the vegetables (I always try to use organic vegetables) and slice fairly regular. Blanch the vegetables in salted water in which you add half a cup of apple cider vinegar. Pour in the ‘boiling water before the vegetables that have a cooking time longer: start with celery and carrot (3 min) then add cauliflower and onions (1 min) then peppers and zucchini (1 min).
Drain the vegetables and let cool. Meanwhile, cut the olives into rounds
Place in a saucepan the tomato sauce (use a homemade sauce or, if you bought it, with no preservatives or condiments!), Add oil, vinegar, sugar and salt. Add a little water if it is too thick.
In a large pot pour the vegetables and tomato sauce, simmer on low heat for 5-10 minutes. At the end of cooking add the olives. Taste the sauce that should be a bit sour , but – as they say – it does not sting in the throat and you should feel just that pinch of sugar ….. An excellent result is achieved with the apple cider vinegar and whole brown sugar, give a relish that I find really special!
Serve the vegetables ….. are ready
Ah! I forgot, I also keep them under glass, after they have been sterilized in the appropriate jars by boiling for half an hour. Investment – deposited in the pantry – you can make up to 6 months …
