Simple and delicious croquettes ….. a different way of cooking the cod, or any other similar fish fillet, hake, etc. …..
The cod fillets that I see at the fish market are always very inviting and these croquettes are always good, everyone likes ….. practically saves a dinner!
Ingredients for 4 servings: 300 gr of cod fillet, 100 g of boiled carrots, 100 grams of boiled green beans, a medium size boiled potato , an egg, bread crumbs, olive oil, salt and, if desired, a pepper.
Cook the cod fillets in a pan with a tablespoon of olive oil,for about 15 minutes
Add salt and a little pepper if necessary. Then leave the cod in a colander to make him lose the cooking water in excess. Chop the flesh of the fish, carrots and green beans with a knife (do not put them in the blender because I prefer to chop a little coarsely) and place in a bowl along with the mashed potato (with potato masher) and the egg
Add a little salt if necessary. By using a spoon shape the mixture into croquettes giving an elongated or round, pressing down with your hands chopped fish and vegetables and pass the croquettes in the breadcrumbs. Press the croquettes again gently between your hands to compress better.
The croquettes are very delicate so be careful not break them . Place the croquettes in a pan lined with parchment paper and greased with olive oil, also pass the upper surface of the kibble with a oiled brush and bake at 180 degrees for about 30 minutes.
After the first 15 minutes of cooking, remove the pan from the oven and turn the croquettes with the help of a pallet and a fork (not turn one before 15 min because the croquettes must have already formed a crust on the side of the cooking so that not to break)
Serve with vegetables to taste
