Simple, fragrant, a bit ‘crunchy and ….. light!
Ingredients for 4 people: 350 g fillet of cod, 60-70 grams of bread crumbs, grated rind of one lemon, 1 teaspoon Sichuan pepper, 1 teaspoon thyme (or oregano or other herbs), 2 tablespoons of extra virgin olive oil.
Cut the cod fillets into small pieces, divided into two, cutting horizontally, those that are too thick.
Prepare the mixture for the breading: Mix the breadcrumbs and one teaspoon of olive oil and place it in a baking pan in the oven at 100 degrees for 5 minutes (this will get it more crisp). Mix the bread , grated rind of lemon, pepper and thyme.
Pass the cod pieces in breadcrumbs, pressing down with your hands: put the pieces of cod in a pan lined with parchment paper and greased with a tablespoon of olive oil: with a spoon pour the remaining oil on the tidbits.
Bake at 180 degrees for about 25 minutes, turning halfway through cooking, when will already be formed on the side in contact with the pan a crispy crust. Salt and serve
