It’s just the right season, the chestnut flour is available in all stores and the dumplings are so good! I serve them with with a gorgonzola cheese sauce because its flavor contrasts well with the sweetness of the chestnut flour.
Ingredients for 4 servings: 250 grams of ricotta cheese, 120 grams of chestnut flour, 1 egg, 50 grams of grated Parmesan cheese, nutmeg, a pinch of salt.
In a bowl, mix the ricotta cheese with the egg, a pinch of salt and nutmeg. Stir in the chestnut flour and adjust the amount based on the consistency of the dough; should be soft but easy to manipulate so as to form the dumplings. Transfer the dough on a plane and form many rolls to be cut into pieces of 3-4 cm.
Form the dumplings with the help of a fork and boil them in salt water. Drain dumplings after about 2 minutes that have surfaced and serve with a sauce of gorgonzola dissolved in a little ‘milk.
