Under the chocolate peaches ….. for this fragrant cake that tastes like spring! I’ve prepared at home by Loretta because it is a recipe yesterday and prepared it for the birthday of her baby (it should be ‘will be a little’ grown-up but still child ‘for his mom!). I told you that this cake knows Spring, peaches are a bit ‘crunchy, their aroma and‘ enhanced by the lemon zest and the scent of macaroons ….. and the chocolate glaze and ‘….. incredibly good!
Here are the ingredients directly from the book of recipes from Loretta:
750 grams of peaches in syrup, 200 grams of biscuits, 200 grams of macaroons, 100 grams of sugar, 2 eggs, zest of one unwaxed lemon. For the icing: 100 grams of dark chocolate, 2 tablespoons milk, 1 tablespoon Marsala.
Sfoggiolare good peaches in syrup and chop them with the crescent moon or a long knife to make small cubes. Whip the egg yolks of the eggs with the sugar until they are light and fluffy, combine the peaches into small pieces, the biscuits and macaroons (previously crushed finely enough) and the grated rind of the lemon.
Add to the mixture egg whites beaten stiff steadfast
Pour the mixture into a cake tin flattening the surface with a spatula
Bake at 180. Degrees for about 40 minutes. In the meantime, prepare the glaze: Melt the chocolate in bain-marie and add the milk and marsala, stirring so that no lumps are formed. After baking the cake, remove it from the pan and turn it upside down on a serving platter
In this way, the lower base of the cooking result the surface of the cake to be decorated with the glaze. Allow to cool and add the frosting
