Turmeric is a spice with a delicate taste, health-giving properties and a beautiful yellow color. Since I learned to use it, I add it when I can, even the most simple dishes to make them more tasty, colored or ethnic.
Today I wanted to cook the rice and turmeric noodles ….. Here is the recipe:
Ingredients for 4 servings: 350 grams of brown rice noodles, 2 tablespoons of turmeric, a leek, olive oil, finely chopped chilly pepper, carrots and zucchini for decorating.
Bring to boil a pot of water, add salt and a heaping teaspoon of turmeric. Boil the noodles for about 3 minutes less than the time indicated on the package.
In a large saucepan cook the leek (previously cutter in very thin slices) with a tablespoon of olive oil for a few minutes: continue then cooking the leek with a little water. After about 10 minutes a add the turmeric. If necessary, add a few tablespoons of water. Drain the spaghetti and cook them in the sauce of turmeric for 3 minutes, add pepper to taste and a drizzle of olive oil.
