Yesterday I had in the fridge fresh salmon ….. why not cook it in a somewhat ‘different?
I decided to try a simple recipe, healthy (rich in omega 3 etc etc …..), fast which is also proved to be very pleasant: the almond-crusted salmon, here it is!
Ingredients for 4 servings: 4 slices of salmon fillet, 8 tablespoons of bread crumbs, 2 tablespoons chopped parsley 3 tablespoons chopped almonds, extra virgin olive oil, salt, carrots or steamed vegetables to garnish.
Prepare the salmon steaks washing, drying them, removing any thorns: with the help of a boxcutter remove also the skin. Toast the breadcrumbs in a pan with a tablespoon of olive oil and mix with it parsley. Prepare shelled almonds and chop them in a blender (I used 16 almonds). Pass both side of the fillets in the bread and parsley mixture pressing with hands
Place salmon in a baking dish lined with parchment paper brushed with oil (I used only a teaspoon since the salmon already contains a little ‘oil) and place on the top of a layer of chopped almonds ; press well with a spoon so as to form a compact and consistent layer .
Bake at 180 degrees for about 30 minutes (the time depends on the size and thickness of the salmon) and during the last few minutes turn on the grill to make is golden brown and crispy layer of almonds. I have served with steamed carrots and a spoonful of potato salad.
